The authors present a comparison of specific energy convective drying and drying in the heat-mass transfer module under the influence of elevated pressure. It is shown that the proposed method for drying leads to a decrease in specific energy consumption for the drying process in 1,5-2 times.</p></abstract><trans-abstract xml:lang="en"><p>The article covers a new technology of drying food raw material in a heat-mass transfer module under the influence of high pressure.
