The study showed that the size of the nanocapsules dry extract of tоpinambur depends upon the nature of the shell. The smallest size of the nanocapsules is 227 nm in the gellan gum that allows the use of nanostructured dry extract of topinambur as nanoingredienta in products funkional destination.</p></abstract><trans-abstract xml:lang="en"><p>The paper presents the properties of nanostructured dry extract tоpinambur, self-organization and defined particle sizes using NTA method.
