Development of the industry of public catering of the region (on the example of the Belgorod region)
For ensuring sustainable development of the industry of public catering there is a need for improvement of activity of the enterprises of food, introduction of new formats of the enterprises, system studying of demand for production and services of public catering. Studying of potential demand for certain production and services has to be a starting point in activity of catering establishment. The competition in the market of public catering grows. Today in the world gains popularity the idea «Slow-food» - it is the movement which is based on promotion of healthy nutrition with preservation of regional and traditional cuisine. Taking into account active development of agriculture and livestock production in the Belgorod region, development of catering establishments of a format «Slow-food» is expedient. «Slow-food» not only will create possibilities for development and search of new consumers to small farms, but also will allow ordinary consumers to be confident in purity and quality of the bought production.
